I don't see the point in making an AU where all the characters are normal living in the modern world. If it's a prompt that requests a modern AU, that's different, the prompter is requesting it. I know some people really like AUs, and I'd guess that keeping the characters recognizable and in character is an interesting writing challenge. But I really don't understand why someone would take a prompt that doesn't ask for a modern AU at all and fill it with a modern AU.
Sure, a fandom like Star Wars means prompts are probably implied to be in-universe. That said, if someone writes “character, bartender!AU” without any extra detail in their prompt, it would probably be fair to put it in the modern world. It would also be fair to set it in a little cantina on Jakku.
Also, some OPs will say things like “anything with pairing/kink/character X”, in which the “anything” could also be fair game for a modern AU. As in, it would be a little left-field, but not actually breaking away from the prompt. I guess context matters?
I'd auto assume they want something in the existing universe unless the prompt directly counters that, and in that case I'd at least ask before filling with whatever.
I don't care for modern AUs, but unless you are the OP I don't see a problem. I would personally ask the OP first if noting is specified like I do for any/any prompts just to be sure. Bu again, if the OP is fine with it...meh.
Or they they really don't care because someone still went out of their way to write something nice for them for free and it doesn't take a lot to be a little thankful?
I would be polite if someone filled one of my non-AU prompts with a modern AU, but I would be privately disappointed, just like if someone had thrown in an unrequested kink that I found squicky.
Or they do care deeply but don't want to discourage any fillers, even ones that do fills vastly different than the prompt without checking the op is okay with the alterations and respond with a neutral 'thanks for filling' response.
I get where you are coming from but some prompts are really outlandish for an in-universe setting so I can see why a filler would just opt for a modern AU.

With those, I also auto-assume literally anything will do.
