For me, shipping means finding a character I like, then seeing who they have the most interesting interactions with - for instance, in TFA I took one look at General Hux, a villain with a hot uniform (yes I have a villainous uniform kink) and an incredibly passionate scene, saw how he reacted to immature manchild Kylo Ren, and knew I would be shipping them. However I'm equally happy with fics featuring JUST Hux, because my interest is primarily in Hux, not the Kylux pairing.
For me, shipping is just a way to more fully appreciate a single character. There are occasionally exceptions of course, but those situations tend to lead to rarepair shipping, because my interests are weird.

In my experience in other fandoms, Shipping is insisting two or more characters ought to be fucking and anyone who doesn't see the possibility or thinks a different set of characters ought to be fucking is an idiot or worse. This is why I don't ship anyone ever.

Don't get me wrong, there are ships that I genuinely think have two or more characters that should totally get together because it would be AMAZING and, like, good for them and stuff. However, the vast, vast majority of the time, "ship" for me means "I would love to see these characters interacting in a sex-based situation because that dynamic would be really interesting."
I don't think it would necessarily be a sustainable or healthy relationship, but it would be compelling. You know, like watching an explosion in slow motion. Basically I'm hungry for novel ideas and weird dynamics. I'm interested in the way authors can sell me on the idea of a ship by bringing characters together in a plausible way, while still keeping them in character.
So give me rare-pairs, give me cross-overs, give me crack-pairs treated deadly seriously. Give me all the ships because I want to see how the hell you could pull off character X and character Y (spoiler, it's sex-pollen).

A good author can sell you anything. I read a Kylux-fic (which I don't ship) a few days ago and I was like "Huh, I am buying this". I still remember a Remus/Snape fic(which I also don't ship) fic from 10+ years ago, which made this relationship totally believable.

That's a lovely way to put things. "Their passion is mine" is the perfect way to express that--vicariously enjoying the intensity of someone else's love.

Not necessarily. Artoo is the narrator, telling the story to the Whills thousands of years in the future. It could be OUR future, just also someone else's past from the point of view of a much farther future.

i really think shipping is less a concious decision, whether we think it or not, and more of a desire-based action. we seek out pairings and dynamics that we crave or find attractive, regardless of whether it's healthy or not or the characters involved. if it's a pairing that is frowned upon, whether due to fandom opinion or unhealthy dynamics, some try to quash the attraction and "choose" not to ship it (ie; ignore the desire to act upon it) though the attraction remains. please don't think i'm implying that you want a relationship like your ship. that's not it. you *do* find a dynamic similar to your ship's to be interesting enough, sexually or otherwise, to fantisize on it a bit.
TL;DR at the risk of going full freudian on you: you unconciously ship what you want but cannot have in a physical or emotional relationship in real life, and therefore toy with the idea in a safe, fictional setting that allows you to play through scenarios without consequences.
