There's not really any specific explanation, beyond it just being a prefence. Some people like polyshipping, the same way some people like slash or femslash or het or gen or whatever.
Group dynamics can be really interesting, seeing the way different combinations of characters work together, mixing it up, splitting them up or pushing them closer. Adding romance or sex into that dynamic changes things up even further, and people enjoy exploring that.
As somebody who enjoys polyshipping, I'm happy to see Finn/Poe/Rey is well-liked - it's very refreshing to see a polyship so widely and readily embraced. But Finn/Poe/Rey/Kylo seems less common, and Finn/Poe/Rey/Kylo/Phasma/Hux even rarer, especially if we're talking in terms of fills rather than just prompts. So I don't know if I'd agree to the idea that "so many people" ship those two combinations. I also wouldn't agree with an OT6 being "overkill". To me, orgies are fun: there really isn't a simpler explanation that that.
Ah, I see. Tumblr posts are a different kettle of fish. I think it largely depends on who you're following - I personally haven't seen many (or any, come to think of it) posts about this particular OT4 or OT6 on my dash. (If anyone can suggest some relevant blogs, I'd love them forever). I stopped following the Stormpilot tag because it involved countless people just saying "I ship it", so it's very easy for people to make posts about a pairing and for those posts to start flooding other people's dashes. If you're following people who reblog all the posts relevant to a certain ship, then I can imagine it would get overwhelming very quickly, especially if it's a pairing you're not into, be it these two polyshipping combinations or any other ship.
A lot of the polyship fics I've read that go beyond three people tend to erase characterization for the sake of orgy porn. Sometimes it seems to be less about group or relationship dynamics and more about pushing pretty people together and assuming they'd all be happy together in a giant cuddle pile.
That's a shame, that you've stumbled upon so many fics that don't care about characterisation. But unfortunately fanfic can be a crapshoot like that - character personalities being erased for the sake of pretty people being pushed together isn't a flaw that's exclusive to polyshipping. Maybe it would just be harder to ignore in a polyshipping fic? When you've got more personalities to juggle, it might be more obvious when those personalities start feeling off.
