I feel like they give us the opportunity to play with relationships in ways that we can't otherwise and justify situations that we just can't in canon. (For example, I like BDSM in fic but only when there's negotiation/out-of-scene stuff to accompany it and I just can't imagine that happening in most SW canon unless there's gratuitous hand-waving.) Plus I'm a very for-the-joy-of-it type of person, and if it makes me laugh it has a permanent place in my heart. The only thing I'm picky about is characterization -- if I can't see and hear the character saying/doing it in my head, I lose interest really quick.
I would never want to see the volume of AU fic overtake canon-compliant fic, but I think it would be a shame not to have any at all. :)
*fricking A/B/O. Pregnancy is a huge squick for me and I don't think I've ever seen this AU done completely in character.
