Maybe he assumed Rey's defences wouldn't be very good for some hand-wavey reason and didn't bother with torture? Maybe it was in the interest of time by that point? Maybe that's yet another reason he struggled with her in a way he didn't with Poe? Maybe the official tortures were on break?
