Yes, I agree. I only like soulmate AUs when they're subverted. Like someone who has multiple soulmates or is colorblind so they'd never see colors when they met their soulmate anyway.

But I do think they've become the new trend and I am getting tired of seeing then. Whenever someone comes up with a unique idea that people enjoy, so many copies pop up and it becomes the new AU trope. I remember it happening after the BDSM AU from Stargate fandom. It was the "new big thing" and then suddenly everyone had BDSM AUs in their fandoms.
