How about if the two of them get stranded in some junkyard somewhere (either they crashed, or they just found themselves there while running from the Order, or something). Poe can fly anything, but he needs something to actually fly. We know from "Before the Awakening" that Rey is really good at fixing things. Let's have her cobble together (with his assistance) the most messed-up-looking, scariest piece of junk in the galaxy, but somehow it's space-worthy and he's able to fly them back to the Resistance.
(I guess we need a reason why she can't fly them. Maybe she burns her hands during the course of the adventure, or she's only able to find parts that she has no experience using. Up to you!)
Anyway, they spend a lot of time admiring each other's skills and becoming good friends.
Bonus if Finn is somehow involved, either back at Resistance HQ, trying to contact them and going out of his mind with worry, or with them but maybe too injured to help. OP ~loves JediStormPilot, but is happy with gen. *g*
